Macadamia-crusted Fish

Make this simple recipe as a nutritious midweek meal for the family or combine it with some delicious salads in order to create a memorable dinner for guests. Almonds can be used instead of macadamias.


¾ cup Macadamia nuts
¼ cup Fresh parsley
1 Tbsp Lemon zest
½ cup Panko breadcrumbs
2 Eggs
2 Tbsp Water
4 fillets White fish (Snapper, Tarakihi, or John Dory)
2 Tbsp Oil


Place macadamia nuts, parsley and 1 Tbsp lemon rind in the food processor and pulse until finely chopped. Combine with the panko crumbs.
Lightly whisk eggs and water together, then pour into a shallow dish. Place crumb mixture in a separate shallow dish.
Dip fish into the egg, then into crumb mixture until coated.
Heat oil in a frying pan and cook fish in batches until golden on each side.
